Weekly Palate Readings @ Cosette
Every Friday at the bar! Guests ranged from people who had never touched wine to seasoned sommeliers, and the experience was the same for all of them: a real conversation, a blind tasting, and complete honesty about what they liked and didn't. From there I built each person a custom flight based on their palate. Everyone left with a card filled with adjectives to describe what they love and grape varietals to seek out next.
Champagne & Oysters
A deep dive into the science and styles of Champagne — paired with oysters sourced from across the country, each selected to complement a specific style, region, and producer.
Intro to Wine Tasting
A foundational class built around tasting theory: how to identify acidity, tannin, and body, and how to recognize primary and tertiary characteristics. Guests tasted through wines that illustrated each concept. Everyone left with a framework for forming their own opinions about what's in their glass.
Valentine’s day: Pasta Making & Red Wines
A collaboration with Chef Jordaline Jimenez — guests made two styles of ravioli from scratch, sat down to dinner, and worked through three distinct red wines. I spent time with each couple individually, exploring their palate preferences and connecting them to the producers behind what was in their glass.
Soirée Beaujolais Nouveau
A flight built around three expressions of Beaujolais — a Nouveau, a Villages, and a Cru, all from iconic producers. Guests worked through each glass while we talked through the appellation system, the region's distinct crus, and the tradition behind Nouveau.
Piedmont Wines & Pastas
Another collaboration with Chef Jordaline Jimenez. Guests made cavatelli from scratch and sat down to a three course dinner while we worked through an education-forward tasting of Piedmont's finest. From Arneis to Barolo and Barbaresco, we covered the region, the grapes, and what makes each style distinct. Guests left with a real understanding of one of Italy's most complex and rewarding wine regions.
Winemaker Event: Domaine Les Enfants Sauvages
A winemaker event featuring Domaine Les Enfants Sauvages, a family-run biodynamic vineyard in the south of France. Guests tasted through four wines and spent the evening in direct conversation with the winemaker about each one: how they're made, where they come from, and the people behind them. A wine night focused on connection and the stories behind the bottle.
